It offers a range of lip smacking dishes - salsa , salads, legumes balanced with good carbohydrates. The best part ? It satisfies your taste buds without tampering with your healthy diet regime.
You can include salsa , guacamole, sour cream, baked beans , mexican rice and burrito along with some shredded vegies and stuff tomato and capsicum as per your choice.
Since chopping the vegies may take an extra minute or two, you can save your time and plan for the meal in advance.
Salsa:
A fresh hot and spicy serving of salsa perfectly complements any mexican , lebanese or morrocon dish.
Ingredients:
- 3-4 medium sized tomatoes , 1 medium sized onion , 3-4 green chillies ,1 tsp of lemon juice
- Few cilantro or coriander leaves , Pinch of red chilli powder , Salt to taste
Preparation:
- Dice the tomatoes and transfer them to a bowl , mash some of them to squeeze out the juices.
- Add finely chopped onion followed by green chillies and cilantro then add salt , lemon juice and chilli powder.
- Now mix and mash ( Don't overdo) by using hand. Tangy Salsa is ready!
Tips:
Drizzle few drops of olive oil to enhance flavour and texture
Sour Cream:
Slash of sour cream never fails to add some extra zing in your recipe.
Preparation:
- You just need to have a bowl of hung curd ( 1 cup of curd hang in muslin cloth to drain extra water)
- In a bowl , take hung curd add pinch of salt, black pepper , some grated garlic or garlic powder ,
- Mix it and finally sour cream is ready.
Tips:
You can also add some flavour if you want like fried onion or spring onion to add kick.
Guacamole:
With lots of health goodness , guacamole is perfect as dip or spread . Avocado is the basic ingredients of guacamole is full of good fat , fiber and nutrients.
Ingredients:
- 1 Ripen Avocado , 1 Medium sized onion ,1 Medium sized tomato ,1 tsp of fresh lemon juice
- Few coriander / cilantro leaves ,3-4 green chillies ,Salt to taste
Preparation:
- Take one ripened avocado , transfer into the bowl, mash it
- Add finally chopped tomatoes , onion , cilantro , lemon juice and salt
- Mix it well and done!

Baked beans:
Mexican platter is incomplete without black beans ( Pinto beans) . It is served as a side dish , filling in burrito or even as a topping in tacos. In all form it is super delicious and supper healthy.
In Indian version we can freely use rajma or kidney beans as a substitute of pinto beans.
Ingredients:
- 1 Cup boiled kidney beans , 1 Small onion , 1 Tomato , 1 tsp chilli powder ,1 tsp cumin powder
- 1 tsp of olive oil , 3-4 garlic cloves , Jalapeno ( Optional)
- 1 tsp chilli sauce or sriracha sauce ( Optional)
Preparation:
- In pan , heat up 1 tsp of olive oil , add chopped garlic , saute for a while
- Add chopped onions tomatoes, and spices
- Cook it for few mins then add boiled beans ,
- Mashed it a little then add chilli sauce.It is ready now!
Mexican Rice:
Mexican rice is a delicious treat not just for your belly but also for your eyes too ...! incorporated with so many colorful vegetables & aromatic species. It's a complete meal in itself.
Ingredients:
- 2 Cup boiled rice , Green, Red, Yellow - Bell Paper , 1/2 Cup Sweet corn
- 1 Small Onion , 1 Shredded Carrot , 1/4 Cup finely chopped beans ,3/4 cloves of garlic
- 1 tsp of cumin powder ,1 tsp oregano ,1 tsp tomato ketchup ,1 tsp chilli flakes
- 1 tsp olive oil , Salf & Pepper to taste
Preparation:
- Heat oil in a pan , add grated garlic saute until it turns aromatic
- Add chopped onion & veggies , saute for a while then add all spices
- Now add boil rice , let all spices coat well over the rice. It is ready now!
Burrito
- You will need tortillas for burritos.Just heat up tortillas on flat pan with butter.
- Spread dips , sour cream, guacamole
- Add beans, shredded veggies , mexican rice and warp it properly.
