Sooji Uttapam Recipe

A popular south Indian healthy recipe- uttapam goes well in the breakfast menu. It contains a batter made of rice & lentils, which is fermented and cooked on a flat pan and topped with vegetables hence it's super healthy.
 
Here, I'll be showing you a quicker version of the same with semolina or sooji. It's equally delicious & healthy food, easy to digest & easy to cook. It's great for weight loss, low in calories, and full of nutrients.

Ingredients: 

  • 2 cup semolina ( Bombay Rawa ) 
  • 1 cup curd 
  • 1 TSP  sugar
  • Salt, black pepper to taste 
  • 1 1/2 TSP of fruit salt ( Eno )
  • Oil 
  • 2 TSP grated Ginger
  • Green chilies
  • Vegetables of your choice- like carrot ( grated)  cabbage, coriander leaves,  finely chopped tomatoes

Preparation:

Step 1: In big bowl mix semolina & curd add little water, sugar to thicken the batter 
Step 2: Let it rest for 15 minutes. Meanwhile cut & grate vegetables of your choice. 
Step 3: After 15 minutes add salt, black pepper & fruit salt to the batter. Just in seconds of adding fruit salt, the batter starts raising & doubled the quantity.

Note: The batter should be moderately thick else you can add water to adjust the consistency. This will help uttapam to become fluffy & light.

Step 4: Now take a flat pan with a thick bottom (preferably non-stick). Heat it up.
Step 5: Grease the pan with oil and bring the flame to low heat 
Step 6: Pour the batter over it, but don't  spread it  
Step 7: Top the batter with vegetables, sprinkle oil on all sides & cover it with a lid. 
Step 8: Leave it for 2 to 3 minutes 
Step 9: It will turn crispy & golden brown.
Step10: Now flip the uttapam and cook on the other side for a while.

Serve it hot with Coconut, coriander, or kara chutney !.
